What Ingredients are needed?
When I first tried making Buffalo Chicken Tater Tot Casserole, I was surprised at how simple the ingredients were. You’ll need 3 cups of shredded chicken, and I usually use a rotisserie chicken and let my stand mixer do the work to shred it. Once, my son suggested using Tyson breaded tenderloins, which worked perfectly. You can also boil and shred some chicken or pan-fry for a crispier texture. The next step is to mix in Buffalo Sauce, cream of chicken soup, sour cream, and ranch dressing. For the cheesy goodness, combine sharp cheddar and pepper jack cheeses. Finally, top it off with tater tots. This combination creates a deliciously creamy, tangy casserole that’s hard to resist.
Ingredients
Two large chicken breasts, cooked and shredded
1 cup buffalo sauce
1/2 cup ranch dressing
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
One can of cream of celery soup
One can of cream chicken soup
One large pkg tater tot (32 oz)
Directions
To make a Buffalo Chicken Tater Tot Casserole:
- Preheat your oven to 350 degrees.
- While the oven is heating up, take a large bowl and stir together cooked chicken, buffalo sauce, and ranch dressing.
- Add half of the mozzarella, half of the cheddar and half of the tater tots.
- Mix in cream of chicken and celery soup until everything is well combined.
Pour the chicken mixture into a baking dish. If you have a smaller but deeper dish, covering the top with the remaining tater tots will be easier. However, if you use a 13×9″ dish, the tots might not cover the entire top but will still cover most of it.
Once the mixture is in the dish, top it with the remaining mozzarella and cheddar, followed by the rest of the tater tots. Place the dish in the oven and cook uncovered for 30-40 minutes. To finish, broil for a few minutes until the tots are crisp and golden brown.
Can this be made ahead of time?
This casserole can be assembled the night before or frozen for later use. If you assemble it the night before, take it out of the fridge and bake it. If you freeze it, wrap it tightly; it will last 2-3 months. When you’re ready to eat, let it thaw in the fridge for 2-3 days and then bake. I don’t recommend baking and freezing, as the tots don’t hold up well.
Everything mixes in one large bowl when making Buffalo Chicken Tater Tot Casserole. Using a stand or hand mixer makes the job easier, but a good old spoon will also work. You’ll need shredded chicken, sour cream, buffalo sauce, cream of chicken, and a packet of Ranch dressing seasoning. Add grated sharp cheddar and pepper jack cheeses. Blend everything until well incorporated, then spread it into a baking dish. Place the tater tots on top and bake at 400 degrees for 30 minutes.
After 30 minutes in the oven:
- Top the casserole with more cheese and bake for 15-20 minutes until the cheese is brown and bubbly.
- Let it stand for at least 10-15 minutes before serving.
- Garnish with fresh parsley and a drizzle of Ranch dressing for added colour. Though it’s pretty filling, you can serve this dish with a side salad, some veggies, or garlic bread.
