Cheesy Taco Rice

Ingredients
  

  • 1 Cup Pepper Jack Cheese, Grated
  • 2 Cups Sodium Beef Broth
  • 10 oz Can of Rotel
  • 1.5 lbs Ground beef or any ground meat you like
  • (2) 1 oz Packet of Taco Seasoning
  • 2 Cups Instant Rice
  • 1 Cup Sharp Cheddar Cheese, grated

Instructions
 

  • Brown the ground beef in a large skillet. Once it’s nicely browned, drain any excess grease to keep the dish light.
  • Next, add the taco seasoning and Rotel to the beef. Mix them well so that all the flavors combine beautifully.
  • Stir in the rice and beef broth, then bring the mixture to a boil. Once boiling, remove the lid from the skillet and let it sit for about 5-7 minutes until the rice is fully cooked and the liquid is absorbed.
  • Now, it’s time to add the magic touch. Spread a generous amount of cheese on top of the cooked mixture. Place the skillet under the broiler until the cheese turns golden brown and bubbly.
  • Finally, serve the delicious Cheesy Taco Rice as is, or add your favorite taco toppings to make it even more special.
