Vodka Sauce Without Vodka

Ingredients
  

  • Four tablespoons butter
  • ½ red onion large, diced
  • Four cloves of garlic diced
  • 1½ cups tomato passata or puree
  • 1¼ cups heavy cream
  • 1 pound rigatoni pasta
  • 1½ teaspoons crushed red pepper or Aleppo pepper
  • One tablespoon of dried oregano
  • ⅓ cup pasta water
  • One tablespoon of dried basil
  • salt to taste
  • 2 cups shredded mozzarella
  • ¾ cup parmesan

Method
 

  1. 1.  Heat olive oil in a pan over medium heat.
  2. 2. Sauté onion and garlic until they become soft and fragrant.
  3. 3. Add crushed tomatoes and heavy cream to the pan.
  4. 4. Season the mixture with salt, pepper, basil, parsley, and a pinch of red pepper flakes.
  5. 5. Let the sauce simmer gently to blend the flavours.
  6. 6. Stir in grated parmesan and romano until the cheese is fully melted.
  7. 7. Once the sauce is smooth and creamy, it’s ready to serve over your favourite pasta.
