Vodka Sauce Without Vodka

Ingredients
  

  • Four tablespoons butter
  • ½ red onion large, diced
  • Four cloves of garlic diced
  • 1½ cups tomato passata or puree
  • 1¼ cups heavy cream
  • 1 pound rigatoni pasta
  • 1½ teaspoons crushed red pepper or Aleppo pepper
  • One tablespoon of dried oregano
  • ⅓ cup pasta water
  • One tablespoon of dried basil
  • salt to taste
  • 2 cups shredded mozzarella
  • ¾ cup parmesan

Instructions
 

  • 1.  Heat olive oil in a pan over medium heat.
  • 2. Sauté onion and garlic until they become soft and fragrant.
  • 3. Add crushed tomatoes and heavy cream to the pan.
  • 4. Season the mixture with salt, pepper, basil, parsley, and a pinch of red pepper flakes.
  • 5. Let the sauce simmer gently to blend the flavours.
  • 6. Stir in grated parmesan and romano until the cheese is fully melted.
  • 7. Once the sauce is smooth and creamy, it’s ready to serve over your favourite pasta.
